So, I was in the mood for some yummy cornbread with my lentil soup. And I saw this at beloved Trader Joe's: Cornbread Mix.
And it's so easy to veganize.
I just substituted egg replacer and earth balance instead of eggs and butter and it came out SO awesome. I highly recommend this mix. It just right with its sweet/savory ratio and it even has bits of corn in it.
